Delicious, Healthy Banana Bread

There’s something about a drizzly bank holiday Monday that always gets me in the mood for a spot of baking. My cake of choice this time was a banana bread. I absolutely LOVE banana bread and this recipe is great, it’s gluten free, dairy free and super easy to make. It is delicious with chocolate spread, peanut butter, toasted with butter or just on it’s own. Here’s how I made it, enjoy xx

1) Preheat the oven to 175 degrees
2) In a dry bowl mix 1 1/2 cups of gluten free flour, 1 tsp baking powder and 1/4 cup of coconut palm sugar and a pinch of himalayan salt
3) In a blender blend to a smooth consistency: 2 eggs, 2 ripe bananas, 1/2 cup soya yoghurt,  1/2 tsp vanilla extract and 1/4 cup coconut oil
4) Pour the wet mix into the dry mix and stir together by hand
5) add in 3/4 cup broken up pecans (you can use walnuts if you like)
6) Bake in the oven for 1 hour.
