Bank Holiday Weekend!

Woohoo, it’s another bank holiday weekend and it’s set to be a sunny one. So, I am here to inspire you to stay healthy and not give into the bank holiday snacking and drinking. However, we have to be realistic don’t we. There is no point telling ourselves that we won’t eat or drink anything naughty, after all we are all human and we all like a nice treat. So, here are some of my loveliest healthiest (but still a bit naughty) recipes for a sunny (nearly) summer bank holiday weekends. Enjoy xx

Cocktails
 Pineapple and Coconut Delight
This is an all time summer time favourite, substitute cream for coconut milk, and if you want to make it extra healthy skip the rum 😉
Blend: (serves 2)
1 handful ice
2 pineapple rings
3 shots of good rum
1/2 tin good quality coconut milk (I use Biona)

Very Berry Mojito (serves 1)
Muddle blackberries and raspberries at the bottom of the glass with 1 tsp agave syrup, 2 lime wedges and a 4 mint leaves. Pour in some good quality rum, vodka or gin (vodka and gin are healthiest). Mix with crushed ice and top with soda water. Delicious and refreshing.

Lunch

Tomato and Fennel Soup
This soup is amazing as it really suits the changeable weather that we are having at the moment. It can be enjoyed hot with toasted rye (like me today) or more as a Gazpacho style soup and served cold with a stick of celery for those hot summers days. Make this by chopping into chunks:
6 tomatoes
2 small fennel bulbs
Season this with olive oil and salt and pepper. Then also before you shove it in the oven add a chilli chopped into quarters and 2 whole garlic cloves.
Bake for 20 minutes
Blend all this with 150ml veggie stock and a handful fresh basil.
Serve with a drizzle of olive oil, black pepper and some fennel leaves.

Dinner
Rainbow Superfood Salad
Make this in layers…
Layer 1: shredded red cabbage and carrot
Layer 2: alfalfa sprouts and chestnut mushrooms cooked with garlic and a squeeze of lemon
Layer 3: quinoa
Layer 4: steamed tender stem broccoli and peas
Layer 5: roasted butternut squash and baby tomatoes with paprika, olive oil and salt and pepper
Layer 6: toasted sesame seeds, black pepper and a drizzle of olive oil
