Healthy Feel Good Meals…

To start the day…

Eggs ‘n’ Greens

Step 1 – Make a bed with a handful of spinach and half a fresh avocado.

Step 2 – Saute some courgette in coconut oil and salt and pepper and add to the spinach and avocado.

Step 3 – Whisk 2 eggs with a splash of almond milk and black pepper. Make your scrambled egg and add on top of the green bed.

Step 4 – Sprinkle with chilli flakes.

 

 

To end the day…

Meat Free Chilli

Step 1 – Put some brown rice on.

Step 2 – Grate a carrot and crush 1 garlic clove and add them to a saucepan with some hot coconut oil.

Step 3 – Add 300g passata, 25g tomato puree, 1 tin black beans, 1 tin kidney beans, sliced jalapeรฑo to the saucepan. Add chilli flakes, salt and pepper to taste.

Step 4 – Cook for about 10 minutes staring it all well.

Step 5 – Pour chilli over your rice and enjoy.

 

Top Tip: make a double batch of the chilli to freeze for a healthy quick meal another day.ย
