Happy Tummy Pancakes
Happy faces and happy tummies all round. These delicious pancakes look indulgent but they contain a healthy balance of protein, good fats, greens and fruit! With hidden spinach and banana your kids won’t know they’re eating their greens at breakfast! Perfect for the whole family on Pancake Day and beyond!
Recipe is for 1 adult.
1 Scoop Protein ( I like vegan proteins, ‘Protein Excellence by Bodyism’ and ‘Sun Warrior Vanilla Blend’
2 tbsp oats
1 handful spinach
* Pour 3 blobs onto hot coconut oil (mix makes about 3 pancakes per adult)
* Once you see bubbles flip them over
* Once brown on both sides serve.
Serve with your choice of toppings. My personal favourite is Coyo Yoghurt, maple syrup and berries 🙂
