Courgetti with Homemade Pasta Sauce

If you don’t have a spiraliser (I don’t either) you can use a vegetable peeler and then slice the courgetti really fine from there.

(serves 4) – but it is great the next day for lunch so it’s always good to make extra.

Ingredients:

  • coconut oil
  • 1 onion chopped finely
  • 3 garlic cloves grated
  • 1 finely chopped chilli
  • 20 cherry tomatoes halved
  • 1 tbsp tomato puree
  • 1 tbsp tahini
  • a handful of fresh basil
  • juice of 1/2 lemon
  • 4 courgettes (cut thinly with a peeler or spiralised)
  • a handful toasted pinenuts
  • salt and pepper
  • some cheese (feta or parmesan)

Method:

  • sauce the onion, garlic and chilli in the coconut oil for a few minutes
  • then add the tomatoes, tomato puree, tahini and basil. Stir well then add the lemon juice, and a little bit of water and then tip the courgetti into the pan.
  • Once the courgetti is soft, season it all with salt and pepper, scatter over the toasted pine nuts and cheese and serve.
