Courgette Banana Bread with Dark Chocolate Chunks

This banana bread is wonderfully moist and tastes like it should be unhealthy, but it is jam packed with lots of great dense nutrition. So, it is perfect for a quick grab-and-go breakfast as it will keep you going until lunch. Or, enjoy as a snack to perk you up throughout the day. Enjoy as is, or I like mine toasted with lashings of peanut butter – a great post-workout treat.

Ingredients:
* 2 tbsp chia seeds
* 1 small courgette
* 4 over ripe bananas
* 1 vanilla pod split
* 300g brown rice flour
* 4 tbsp maple syrup
* 4 tablespoons apple puree
* 1 tablespoon ground cinnamon
* Coconut oil (to grease the tin)

Method:
1) Pre heat the oven to 200C
2) Place the chia seeds in 8 tbsp water to soak f0r 10 minutes
3) Grate the courgette into a bowl with the mashed banana and vanilla seeds. Then mix in all the other ingredients and let to sit for 10 minutes
4) Oil a loaf tin with coconut oil and pour in the ingredients. For decoration you can add half an additional banana to the top lengthways or chocolate chunks (as I did), or maybe some linseeds.
5) Bake for 45 minutes. Allow to cool and enjoy. Can be stored in an airtight container for up to 5 days.
