Protein Packed Banana Bread

This banana bread is delicious and definitely not just for the occasional treat. It is a real winner as it is packed with healthy fat and protein which helps your energy levels stay steady and so is perfect for a quick breakfast, on-the-go snack or lunch box energy bar for your kids. It is also super easy to make as it just requires the ingredients to be blended and baked – bonus! Make sure you use ripe bananas (yellow with brown speckles) for maximum flavour.

You need:
3 ripe bananas
30g coconut oil
1-2 tbsp maple syrup
1 tsp ground cinnamon
1 tsp vanilla extract
3 large eggs
1/2 tsp bicarbonate soda
1 tbsp lemon juice
220g ground almonds
30g flaxseeds
1 tbsp whole flaxseeds (linseeds) for the topping
Himalayan salt

To make:
1)  Preheat oven to 170C and line a loaf tin with baking paper (enough to fold over the banana bread to store it too when it’s cooked)
2) Blend the banana and coconut oil till mushed then add all the other ingredients and blend again till smooth.
3) Pour mixture into your loaf tin and sprinkle with the whole flaxseeds.
4) Bake for 60-90 minutes. It is done when a skewer inserted into the centre comes out clean.

Enjoy the banana bread warm straight from the oven or store it in the fridge for up to a week.
