Easter Gooey Chocolate Brownies

Gluten/dairy/refined sugar free brownies

These chocolate treats are delicious and compared to all other brownie recipes they are guilt free. They are also easy to make so they really are win, win! Ok, so this recipe makes 12 gooey scrummy brownies.

You need:
1 tbsp chia seeds
1/2 cup coconut oil
1/2 cup dark chocolate buttons
3/4 cup coconut palm sugar
1 jar apple/banana sauce (350g from Infinity Foods/Wholefoods)
2 tsp balsamic vinegar
2 tsp vanilla
2/3 cup teff flour
1/4 cup brown rice flour
1/2 cup topiaca flour
1/3 cup raw cacao
2 tsp baking powder
1/2 tsp baking soda
1/2 tsp xantham gum
1/2 tsp himalyan salt

Method:
Heat oven to 170 degrees and line  a 8×8 square cake tin with baking paper.

Add chia seeds to water and let sit for a minimum of 5 minutes to thicken.

Melt chocolate buttons with the coconut oil over boiling water. Add the coconut palm sugar. Stir until combined. Remove from heat.

Mix together the apple/banana sauce, balsamic vinegar and vanilla in a mixing bowl and stir. Add chia seed and water mixture and fold in.

Add the melted chocolate mixture to the apple/banana sauce mixture and stir.

Place all left over (dry) ingredients in a bowl and mix to combine.

Now you can add the dry mix to the wet mix and stir well with a spatula. Don’t use an electric mixer.

Pour all into the lined cake tin and bake for 25-30 minutes. Do not over bake.
