My Stuffed Post-Gym Squash

I came home after the gym and wanted something nutritious, easy and that used up my left over veg. This was my creation, it was yum, so, I want to share it with you lot. It’s great because you can shove the squash in the oven to roast while you jump in the shower. Or, stick it in the oven the night before and have it cold. Either way, this is such a nice dinner. So here goes, this is what I did.

Method
1) cut the squash in half remove the seeds, cover in olive oil and salt and pepper and stick in the oven for 35-40mins on 200C.
2) Once this is nearly done, lightly fry 1/2 onion and 4 chopped mushrooms in coconut oil.
3) Add 1/2 cup quinoa, mix for a few mins then add 1 cup boiling water. Leave to cook until the quinoa is done.
4) Once the water is soaked up add: zest 1/2 lime, juice 1/2 lime, 1/2 chopped red chilli, 1 garlic clove, grated ginger, a squeeze of agave and a splash of soy sauce.
5) Mix through a handful of fresh chopped mint and parsley
6) Pour 1/2 the quinoa mix in each half of the squash.
7) Top with the dressing (see dressing recipe below), toasted seeds and feta

For the Dressing:
Blend:
1 tbsp tahini
1/2 red chilli
splash orange juice
chopped parsley
splash soy sauce
